INGREDIENTS
2 large serves
6 small potatoes
PREPARATION
Get out your wok (it's possible but annoying with a flat pan). Fill
with about 1 cup of olive oil. Grind garlic and chilies in a food
processor (or chop finely) & add to the oil. Heat oil on high while
cubing potatoes. Once garlic has browned, add potatoes and cover,
stirring periodically. Chop remaining ingredients while potatoes
soften.
Add broccoli and cauliflower and cover, stirring periodically.
Add zucchini, onion and red bell pepper and soy sauce to taste. Cover
and let steam for a minute or so. Turn off heat and let steam for
another minute or so. Serve.
Comments:
Sometimes I add chopped tomatoes at the very end. Just don't let them
stay in the heat too long.
Also, you can try substituting herbs for the chilies if you aren't
into spicy recipes. If you don't have fresh chilies but like the heat,
use tons of cayenne pepper. Just watch out when you lift up the lid,
as it will make you cough.
